Unlike green or black teas, the leaves of white teas are merely withered and dried. This means that white tea has both higher levels of antioxidants and vitamins as well as much less caffeine than other varieties.
Due to this lack of processing, white teas are delicate and are best brewed with water that has cooled for about 1 minute after just coming to a boil. They only need to be steeped 1-2 minutes. Please note: images represent the flavor of the tea, not necessarily the ingredients.
